Homemade Chili Mayo

This homemade chilli mayo is easy to make and the taste is definitely worth the effort... Bring it to the picnic, serve it when entertaining or give it as a present together with a beautiful tea towel.

1 egg yolk
½ egg white
A pinch of salt
½ - 1 Tsp. lemon juice
1 ½ dl. Neutral-flavored oil
½ - 1 chilli depending on how spicy you want your mayonnaise
Dried chilli flakes to your liking

Wisk together yolk, egg white, lemon juice and salt. You can use a hand blender. Add the oil to the mayo mixture in a slow, thin stream. Continue whisking continually as you add the rest of the oil. It is very important that you do it slowly so the oil can be absorbed - if the oil is added too quickly there is a danger of curdling the mayonnaise. Add chilli  - both flakes and fresh chilli.
